I N G R E D I E N T S

1 1/4 Cups Chicken Bone Broth or Chicken Stock
3 Tablespoons Ghee
1 Cup Golden Potatoes chopped
1/2 Cup Carrots chopped
1/3 Cup Yellow Onion chopped
2 Garlic Cloves peeled and chopped
1/4 Cup Cashews
1 Tablespoon Lemon Juice
1 Teaspoon Dijon Mustard
1 1/2 Teaspoons Salt
1/4 Teaspoon Paprika
1/4 Cup Roasted Tomatillo Salsa or Green Salsa of choice
3 Teaspoons Arrowroot Powder
8 Ounces Green Chiles

D I R E C T I O N S

  1. Combine all ingredients except arrowroot powder and green chiles into a saucepan.

  2. Bring ingredients to a boil, then lower temp to medium low. Simmer for 15 minutes.

  3. Pour ingredients into a blender. Add in arrowroot powder. Blend until smooth

  4. Pour sauce back into the pan . Add in green chiles and stir to combine. Cook on medium low for 5 minutes to thicken sauce.

  5. Serve warm and enjoy! Extras can be stored in an airtight container in the fridge for up to one week.
